Paleo monster truffles are made of only 5-ingredients, ready in only 10 minutes and so delicious and scary !
This year my little girl will celebrate her first Halloween party. She is almost 4 years old so I thought it was the right age to starts the candy mania collection.
I am not very worry about it because she is very aware of the danger of sugar. But as a health conscious mama who don’t eat refined sugar myself I choose to develop some fun and healthy Halloween treats for her. She loves any kinds of bliss balls so this paleo monster truffles are perfect for her.
I choose dried apricot as a base because of the orange color that goes perfectly with the Halloween colors. Also dried apricot is one of my favorite dried fruits to control my sugar level. It contains only 21 g of natural sugar per 100g which is 4 times less than dates.
The recipe is pretty simple and all you have to do is combine apricots, coconut, coconut oil, almond powder and vanilla into a food processor. If your kids can’t bring nuts at school you can simply make nut free truffles by switching the almond meal by oat bran. It is also much cheaper to use oat bran and the result will be as delicious as almonds – but not Paleo though!
