This is the Bacon Broccoli Coconut Flour Quiche I made with Coconut shortbread crust recipe I shared before on the blog. This quiche make a super healthy dinner or lunch and it has been totally approved by my 2 years old girl too. The crust is crumbly and buttery with a moist broccoli and bacon filling.
I cooked the broccoli in boiling water and drained it before adding it into the crust. I did not pre baked the crust. I baked all at once, crust and filling together.
It makes an easy paleo dinner for the whole family. I stored the quiche in the fridge for 2 days and rewarm 10 minutes on a tray in a warm oven at 180C. You can also freeze this quiche for later to add into kids lunchbox.
