coconut flour waffles I do not have a full access to my kitchen until this week end so I can not use the oven. But it does not mean I am not baking anything! It is a perfect excuse to do Grain free banana waffles ! I love waffles for breakfast. It is warm and comforting. It is crusty on the outside and soft in the middle. Today I did grain free banana waffles recipe inspired by the lovely blog all against grain here.  I did not change much from the original recipe that I already tested before and was really good. I only choose to use a mix of almond meal and cashew nuts instead of using only raw cashews. Also I sweetened the dough with a banana which gave a softer texture to the dough. It taste like a banana bread and it was a very light and fluffy waffle. This recipe is suitable for paleo diet if you are using coconut oil or ghee.  It is an easy paleo waffle recipe.

This recipe made 6 medium size waffles. I bake them all in advance and kept them wrap in foil up to 2 days. You can rewarm them in the iron or in a toaster for few seconds. To have identical size each time I am using an ice cream scoop maker to scoop the dough into the iron.

I hate them with rice malt syrup or topped with fresh yoghurt and berries. Another options is to make some raspberry chia seed coulis by simply mixing 1 cup of fresh raspberries with 2 tbsp of activated chia seeds (soaked in water for few minutes).

  • Preheat your waffle iron.
  • In a blender mix the cashews nuts, almond meal, coconut flour and coconut oil until the cashews are pulsed in powder. You may have to stop the food processor every 30 seconds- 1 minutes, scrap down the side of the bowl with a spatula and repeat. Make sure there is no bites of nuts.
  • Add all the others ingredients : eggs, coconut milk, baking soda, ground cinnamon, mashed banana and blend until it forms a soft and moist dough..
  • Grease the waffle iron with butter or coconut oil or ghee using a pastry brush.
  • Use an ice cream scoop maker to scoop the dough and dispose on the iron.
  • Bake for 3 minutes or until golden on the outside.
  • Enjoy with a bit of rice malt syrup, honey or fresh yoghurt and fruits.
