What’s better than a fresh salad to recover from jetlag? I came back from France yesterday after a 35-hour trip and even if I followed my favourite anti jetlag diet I am tired. I wasn’t motivated to spend hours in the kitchen but I still wanted to eat a healthy lunch full of vitamins.
This salad mix rocket salad with grapefruit, mozzarella di bufala, tomatoes and black olives. I did a quick dressing with 2 tablespoon of hazelnut oil and 1 tablespoon of apple cider vinegar. I also tried to make this simple salad a bit fancy by cutting the mozzarella ball and squeezing tomato slices and olives inside.
