Grapefruit Mozzarella Salad

Grapefruit Mozarella Salad What’s better than a fresh salad to recover from jetlag? I came back from France yesterday after a 35-hour trip and even if I followed my favourite anti jetlag diet  I am tired. I wasn’t motivated to spend hours in the kitchen but I still wanted to eat a healthy lunch full of vitamins.

DSC_0018 pic This salad mix rocket salad with grapefruit, mozzarella di bufala, tomatoes and black olives. I did a quick dressing with 2 tablespoon of hazelnut oil and 1 tablespoon of apple cider vinegar. I cut the grapefruit into sections to only remove the pulp. I also tried to make this simple salad a bit fancy by cutting the mozzarella ball and squeezing tomato slices and olives inside.

  • 200 g rocket salad
  • 1 Mozzarella Di Bufala
  • 1 grapefruit
  • 10 Marinated black olives
  • 1 to Mayo
  • 2 tbsp hazelnut oil
  • 1 tbsp Apple cider vinegar

  • Place the rocket salad in a bowl.
  • Slice the tomato.
  • Cut the grapefruit into section to only extract the pulp.
  • Slice the top of the mozzarella ball.
  • Insert tomato slices into the sliced mozzarella ball and a place black olive in each slice intersection
  • Prepare the dressing by mixing 2 tablespoons of hazelnut oil with 1 tablespoon of apple cider vinegar.
  • Add the dressing before serving.
