Healthy Broccoli Quiche – low carb brunch or breakfast

This is a very easy healthy broccoli quiche recipe made with simple ingredients that you probably have in your fridge. All you need is:

  • Broccoli – boil or steam before adding in the crust. I also chop the broccoli in small pieces
  • Bacon slices 
  • Eggs
  • Almond milk
  • Garlic salt
  • Grated cheese – I love mozzarella or emmental

Coconut flour pie crust – keto + gluten free

This quiche is made on my favorite low carb pie crust, a 4 ingredients coconut flour crust. I recommend you prebake the crust 15 minutes for extra crispiness. It makes an easy low carb brunch or breakfast for the whole family. I stored the quiche in the fridge for 2 days and rewarm 10 minutes on a tray in a warm oven at 180C. You can also freeze this quiche for later to add into kids lunchbox.

Ingredients

Bacon and Broccoli quiche filling

  • 5 slices of bacon cut into thin strips
  • 1 small broccoli head cut finely, cooked in boiling water, drained
  • 3 eggs
  • 1/2 cup milk of your choice I used almond milk
  • 1/4 teaspoon garlic salt
  • 1/2 cup grated cheese mozzarella or edam or cheddar

Instructions

  • Preheat oven to 180C (360F)
  • Grease a pie mold of 24 cm (9 inches with coconut oil or butter. Set aside.
  • Prepare the coconut flour crust following the recipe on the blog here. Prebake the crust 15 minutes then add the filling as below.
  • Spread evenly the bacon strips and cooked broccoli pieces onto the prebaked crust.
  • In a separate bowl, whisk the eggs, milk, garlic salt and half grated cheese until well combine.
  • Pour the egg mixture onto the crust.
  • Sprinkle the rest of the grated cheese on the top and bake for 30 minutes or until the filling is set.
  • Cool down in the pan for 5 minutes, then unmold by pushing the loose pan bottom to the top.
  • Serve 8 people.
  • If desired decorate the top with pan fried bacon slices.

Storage

  • Store in the fridge for 3 days in an airtight container. Rewarm in hot oven 120C (250F) for 10 minutes.
  • Freeze in zip plastic bags. Defrost the day before in the fridge. Rewarm in hot oven 120C (250F) for 10 minutes.
