As we live in New Zealand all the game are broadcast in the morning which makes me though that I will not have to watch football so much. But unfortunately my worldcup fan want to watch all the French game. And obviously football is associated with finger food which is not always the healthiest one. But my goal during this worldcup is to develop healthy finger food recipe. So last time I shared with you my way to turn out a burger into a healthy low carb and gluten free dish by using sweet potatoes to create the burger buns. Recipe here Low Carb Burger.

Today I will share another options of healthy finger food to enjoy while watching the football worldcup. A Low Carb Tacos. I simply used lettuce to wraps the minced beef instead of commercial wraps. We add some sour cream and fresh coriander on the top. I cooked the minced beef with a bit of red wine – I told you he is supporting France so it as to be a bit Frenchy no? – carrots, red onions and kidney beans.

Ingredients

  • Tacos Beef Filling
  • 500 g minced beef
  • 2 carrots diced
  • 400 g kidney beans
  • 1 red onion
  • 1 tsp paprika
  • 1 tsp cumin
  • 10 g fresh coriander chopped
  • 3 tbsp red wine - or beef stock if you prefer a non alcohol option
  • Olive oil
  • Salt Pepper
  • Tacos Wraps
  • 20 lettuce leaves cleaned
  • Sour cream
  • Fresh Coriander
  • Optional : grated cheddar

Instructions

  • Tacos Beef Filling
  • Peel and cut the red onion in slices.
  • In a sauce pan warm 2 tbsp olive oil
  • Grill the red onion until soft and tender.
  • Peel and dice the carrots finely.
  • Add the carrots in the sauce pan.
  • Cover and simmer for 10 minutes.
  • When the carrots are soft add the minced beef, kidney beans, paprika, cumin and fresh chopped coriander.
  • Stir well until all the meat is cooked enough.
  • Add the red wine.
  • Cover and simmer 5 minutes.
  • Add salt, pepper.
  • Tacos Wrapping
  • Clean lettuce leaves.
  • Remove extra moisture by lying them onto absorbent paper.
  • Fill the lettuce wrap with the tacos filling.
  • Top up with fresh coriander and sour cream.
  • Optionnal: add grated cheddar.
  • Hold with a square of baking paper or papper towel.
