Green Lentils Leek meal – Meat Free Monday

It is Monday and another exciting week is starting. I never liked Monday before. I was always feeling so nostalgic about my week end and having to  tell your colleague about the awesome thing you did during the week end was not helping – yes, kiwis like to know what you did in the week end, it is surprising how Kiwis care about people!

But since I am staying home I love Monday. My girl is with me on Monday and it is like our private day after the family week end. We hanging out in bed in the morning watching cartoons – now I know why cartoon are diffused at 6.30 am – and then we are having a lazy breakfast in our pyjamas.  The good thing is she is then having a long nap of 3 hours and I can use this time to prepare myself and cook a nice meal for my lunch. I have been a vegetarian for a while and I am still enjoying vegetarian meals when I am on my own. I do not know why but men always want meat – specially red meat – in any meal. I am so glad to have lunch alone each day to prepare my favourite vegetarian lunch !

So I prepared me a perfect autumn lunch to warm me up. I used green lentils and leek that I cooked with light cream, fresh organic orange juice, gloves, bay leaves and leek. Awesomely tasty! Most people hate lentils but it is just depends on how you cook them. I agree that it is not the sexiest and prettiest meal on earth but bring a bit of colour to the plate with some fresh orange and parsley and hop hop hop! nice it is.

Orange Creamy Green Lentils with Leek

Creamy orange Green lentils & leek

Ingredients

  • 100 g cooked green lentils
  • 1 organic fresh orange - juice and zest
  • 10 cl light coconut milk
  • 1 leek
  • 1 Bay leave
  • 3 cloves
  • 1 onion
  • Fresh parsley
  • Extra virgin olive oil

Instructions

  • Diced the white part of a leek and clean under fresh water to remove all the dirt.
  • In a cast iron pan warm a tablespoon of olive oil.
  • Add a diced onion, bay leaves and gloves,
  • Stir and cook until the brown onion get shiny and gold.
  • Add the diced leek, cover and simmer for 10 minutes.
  • After 10 minutes add the cooked lentils and the juice of one fresh orange.
  • Stir well to blend the taste.
  • Simmer for 20 minutes.
  • Remove from heat and add the light cream.
  • Serve with fresh parsley and orange zest.
