Overnight Oats Recipe

A creamy and dairy free Overnight Oats Recipe that marry coconut and raspberry. A fresh dairy free breakfast to kick start the day with lots of energy and taste!

 I love those extra long week end when you can enjoy a late breakfast with your family. This week end I wanted a special treat for breakfast. Something different to my usual home made sugar free muesli – yes I know I have to share the recipe too! So I did this raspberry coconut overnight oats recipe for breakfast. If you are always looking for new kids breakfast ideas this overnight oats recipe is a must do! My little girl loves it. It is very simple to make and it takes only 5 minutes to process all the ingredients in a mixer. Then it required a little bit of patience because it has to stay a night in the fridge – ahaha well yes it is called an overnight oats recipe ! – before being enjoyed. But the good thing is it required very cheap ingredients that we all have in our kitchen and it stores well in the refrigerator – for up to 2 days or probably more but we finished the whole batch within 2 days. So you can easily prepare a large batch and store for the next days.I made this recipe using coconut milk but any other milk will work well. I am just very crazy about coconut! I sweetened mine with stevia powder because as usual it is the best way to sweetened a recipe without sugar and without impacting my blood sugar level.

My husband and little girl had honey in their batch because I wanted to try other sweetener to see how it goes. Stevia powder and honey are both great in this overnight oats recipe but I will just recommend to be careful with the quantity of honey. It has a really sweet flavor and high GI index that impact sugar level quickly. So you will probably have to use only 1 teaspoon per batch to keep this recipe low sugar. I hope you will enjoy this overnight oats recipe as my little family did. We are all looking for new ideas for breakfast and this one is a really healthy, money saver and tasty breakfast recipe. I am already thinking about developing others taste for next time. The texture is very creamy and the coconut raspberry mix is just delicious! I decorated the top with extra frozen raspberries and coconut flakes.

Raspberry Coconut Overnight Oats Recipe| Dairy free

This recipe serve 4-6 people.

Ingredients

  • 2 cups rolled oats wholegrain
  • 1 1/4 cup frozen raspberries
  • 3 cups coconut milk or almonds milk or cow milk
  • 1/4 cup shredded unsweetened coconut
  • 1 tbsp stevia powder or 4 tbsp honey
  • 1 tbsp. vanilla paste or vanilla extract
  • To decorate
  • Frozen raspberries
  • Coconut flakes

Instructions

  • In a food processor with the S blade attachment process all the ingredients until no more lumps.
  • It should not take more than 1 minute.
  • Add a bit less milk if you prefer a thick consistency more like a pudding.
  • Transfer onto glass jars or bowls.
  • Place in the refrigerator overnight and eat the next day for breakfast.
  • Can be stored in the refrigerator up to 4 days in a closed container.

    • Hi Isabel, I agree with you sweetness is always difficult to adjust on breakfast recipe. It really depends if you have got a sweet tooth or not. Personally, I always prepare mine with a bit of stevia and only use honey for my my girl Emma who loves sweet ! I hope you make it again (with less honey or try brown rice malt syrup it has 2 times less sugar than honey while it doesn’t change the texture of the recipe! See you soon on the blog! xoxo. Carine.

      • Hi Lisa, It serve 4-6 people. You can easily keep the recipe in the fridge for a week in an airtight container and enjoy this for breakfast every morning. I updated the recipe card and I apologize for missing this information ! Enjoy the recipe and I hope you love it as my family do. Carine.
