Those Raw Avocado Protein bar are the most nourishing and healthy plant-based protein dessert. Those protein bar combine wholesome ingredients into a delicious sweet protein bar with a lovely green colour. Those raw avocado protein bars are loaded with ingredients that are only good for you including almond, avocado, coconut butter and banana. So don’t look further and make them now!

raw avocado protein barFor those who read me for a while you know that I am always on the look for new recipe ideas to make my little girl eat raw avocados. That is one of the reason why I developed this raw vegan protein bar with avocado. I mainly made the bottom layer with a mix of raw cocoa powder, dessicated coconut, almond butter and coconut oil – which is always the perfect ingredient for yummy raw baking. However, I also made a batch using organic plant-based protein cocoa powder for myself as a fulfilling protein bar to eat after my run.

Raw vegan protein bar

The middle layer is very soft and creamy made with a mix of ripe avocado and slightly ripe bananas. I drizzle a mix of raw unsweetened cocoa ganache on the top slighlty sweetened with rice malt syrup but any other liquid sweetener will work like maple syrup or honey. I do prefer rice malt syrup as it contains a very low amount of fructose and sugar. It is very optional but I added 1 tablespoon of Naturals Stevia Powder Jar in the ganache to decrease the bitterness of the raw unsweetened raw cocoa powder. It is better to use stevia powder to increase the sweetness of the ganache – instead of increasing rice malt syrup because it will not impact the ganache consistency. Too much rice malt syrup will keep the ganache very soft and I think it taste better with a crunchy topping. These raw avocado protein bar are a very healthy treat for the kids lunch box as it contains vegetables, fruits, protein and it is just yummy and a good alternative to highly sweet usual cookies.

vegan slicesThose Raw vegan protein bar are naturally refined sugar free – sweetened with a tiny amount of rice malt syrup. It is also a protein bar that could be appreciate by everyone on a gluten free, vegan, clean or paleo diet.

Another thing I really love with those protein bar is the soft middle layer almost like a mousse. I always found slices too dry and my little girl really love how messy it is to eat this bar. Because it is a raw baking recipe it took me only 20 minutes to make a batch of 12 squares protein bars. You know how much I love simple and nutritious recipe and this one only required a good blender to mix all the ingredients.

You can see the steps by steps picture below. Of course you will have a bit of dish washing to do between layers but it is perfect because it match the time each layer need to stay in the fridge. It means that in 20 minutes you can eat those lovely guilt-free cookie without worrying of cleaning the kitchen. It is already done! ahaha do I looks like a lazy mum saying that ?

Conservation: please note that avocados and bananas oxidized very quickly and the green color of those bars is getting darker very quickly. It starts to get brown after 2 hours. It is still very tasty to eat the next day but if you want to serve them with a nice green color prepare the slice only 1 hour before serving. Keep in the fridge for a max of 48h.

Instructions

  • Bottom layer
  • Pour all ingredient in a food processor with the S blade attachment. I am using a KitchenAid Food Processor which is very powerful to blend and grind ingredients in raw baking.
  • Blend for 30 second to 1 minute or until all the mixture is consistent.
  • Transfer into a square mould covered with plastic wrap.
  • Refrigerate while preparing the middle layer.
  • Slice the bananas and diced the avocado.
  • Transfer all the ingredients into the Food Processor with S blade attachment
  • Blend until smooth and consistent.
  • Pour the mixture onto the first layer.
  • Return to the fridge while preparing the top layer.
  • Top layer
  • In a bowl combine the raw cocoa powder with melted coconut oil and the rice malt syrup.
  • Add some stevia powder if you think it is too bitter.
  • Brush the top of the slice with this mixture.
  • Decorate with dessicated coconut.
  • Refrigerate for 15 minutes until the top is solid.
  • Cut into square and store in a airtight container in the fridge for a maximum of 2 days.

  1. you should amend these to “no sugar added,” as there is naturally occurring sugar in some of the ingredients (banana, avocado, etc.)
