How To Make Sugar-Free Cookies For Diabetics

This one-bowl food processor cookie recipe is very easy to make and only requires a few simple ingredients.

Ingredients

  • Macadamia Nuts – Macadamia nuts are very low in carbs and contain a good amount of fat. It is a great nut to use on a low-carb or keto diet, and it blends really well. You can use cashews as a replacement but be mindful of carbs! Cashews have more carbs.
  • Unsweetened Desiccated Coconut – it’s essential to pick unsweetened coconut. Otherwise, the shredded coconut can contain added sugar.
  • Coconut Oil – use refined coconut oil if you don’t like the flavor of coconut.
  • Eggs
  • Coconut Flour – coconut flour is a low-carb, high-fiber flour with plenty of nutrients. You can make many recipes with coconut flour, both sweet and savory, as it’s a very versatile ingredient.
  • Vanilla Extract

LOW CARB CHOCOLATE CHIPS COOKIES

If you love crispy borders, moist nutty center, and melted sugar-free chocolate chips, make this recipe now!

I am using sugar-free chocolate chips, you can use either sugar-free dark chocolate or milk chocolate chips If you can’t find sugar-free chocolate chips at the store, make your own following my chocolate chip recipe.

The last option, replace the sugar-free chocolate chips with roasted cocoa nibs. It won’t melt but it doesn’t contain sugar at all and it has a strong cocoa flavor.

Coconut flour is essential in this recipe. It brings all the ingredients together to create a crunchy cookie.

Make the sugar-free cookie dough by combining all the ingredients (except for the chocolate chips) in the bowl of a food processor.

Process for about 60 to 90 seconds until a thick and sticky dough forms. Transfer the dough to a bowl and incorporate the chocolate chips with a silicone spatula.

Shape 8 cookie dough balls from the batter and place them on a baking dish lined with lightly oiled parchment paper.

Baking The Sugar-Free Cookies

Flatten the cookies with your hands to give them a classic cookie shape.

Place the baking tray in an oven preheated to 320°F (160°C) on the middle rack.

Bake the cookies for 15 to 20 minutes. You know they’re ready when they turn golden brown on the edges.

Take the baking tray out of the oven and let the cookies cool down for 5 minutes without touching them.

Transfer them to a cooling rack for another hour of cooling before enjoying them.

Storage Instructions

You can store these sugar-free chocolate chip cookies in a metallic box for up to a week.

It’s also possible to freeze them in individual containers for up to 3 months. Thaw them in the fridge overnight or pop them in a warm oven for a few minutes.

Instructions

  • Preheat oven to 320°F (160°C).
  • Cover a cookie sheet with parchment paper. Set aside,
  • In a food processor, with the S blade attachment, add all the ingredients except the chocolate chips and process until it forms a cookie dough.
  • Transfer the cookie dough into a mixing bowl and using your hands, incorporate the sugar-free chocolate chips into the dough.
  • Remove from the bowl and shape 8 cookies into balls similar to golf balls.
  • Place cookie balls on the prepared baking tray leaving 1 thumb between each cookie.
  • Flatten with your hand palm. If crumbly on the side reshape slightly with your finger until the sides look smooth.
  • Bake 15-20 minutes or until slightly golden on the edges. Some oil may be released on the tray and that is fine.
  • Remove from oven and using a spatula transfer the cookies on a rack to cool down for 1 hour to firm up. They will harden when cooling down.

Notes

Storage: Store well in an airtight container or cookie jar for up to 1 week.
Sugar-free chocolate chip alternatives: cocoa nibs or make your own following my sugar-free chocolate chips recipe.
Nuts: you can use roasted or un-roasted nuts in this recipe. Macadamia nuts replacement can be cashews (more carbs!) or blanched almonds.

    • Hi, I didn’t try those cookies egg free. However, I have plenty of vegan keto recipes on the blog as I et Keto and hubby is vegan. For cookies I recommend either my keto vegan peanut butter cookie recipe. For sweet loaf, I didn’t had good result using flaxegg so I won’t recommend adapting the chocolate zucchini bread vegan.     • Bonjour Pauline, sorry for missing that step! I updated the recipe now. You add the chocolate chips after the batter has been processed into the food processor. Transfer the processed cookie dough into a bowl and use your hands to incorporate the chips. You can also swap the chocolate chips by dried raisins, goji berries or nuts if preferred.     these look great, also good to know theres not so much flour in the mix. its true about not baking for too long so it wont be hard,the last set of cookies i baked were too hard. ill be careful next time. thanks for sharing.

    • Hello, Thank you ! I love low carbs cookies and those one are my favorite, coconut and cashews are such a great combo! But yes be careful on your baking time. This cookie recipe is using coconut oil which harden when cooling down. So even if the cookies looks soft after 10-15 minutes of baking they will harden after an hour at room temperature. Well, crunchy cookies taste good too but I prefer if the centre is a bit moist and soft. Enjoy them and see you soon on the blog! Carine.

    • Coconut flour is such an healthy flour full of fibre and low carbs. But it could be very tricky to bake with it as it is really absorbent and you can not use much of it in recipes. I love using it in those cookies it really add something ! Enjoy them! Carine.
