Meringue Cookies without eggs!
A meringue cookies recipe without eggs using chickpea brine or the magic liquid called aquafaba.
What a surprise I started to whisk the liquid in my stand mixer and after only 3 minutes it absolutely acted as egg white creating the fluffiest egg white on earth. As I am trying to keep my blood sugar level steady I choose Natvia Icing mix to make my meringue. This ingredient is essential to make sugar free meringue using chickpea liquid and you can get it from here.
The good thing about this recipe is that it contains less than 2 calories per bites making those meringue the perfect sweet treat for everyone on a diet. Often, you asked me if you can substitute Nativa icing mix by sugar. Well, yes but keep in mind that the calorie and sugar amount per bites will be around ten times bigger.
Again, if you want to keep it healthy and low calorie you should not replace the natvia icing mix by real sugar. You can also try other natural sweetener but waht I found really special about this icing mix is the texture that looks exactly like icing sugar. It dissolve perfectly into the whipped chickpea liquid and works perfectly to shape meringue.
