I did not drink alcohol since the end of the year 2015.
It is part of my new year’s resolution. I will not drink alcohol to keep my blood sugar level on track.
But with the hot NZ summer season and Valentine’s day coming soon I really want to enjoy some drinks with my friends. Yesterday night I was on a Girl’s night out and I tried a Nojito without sugar. It is basically a Mojito with no alcohol and no sugar. It was fresh but quite boring too.
At last it inspired me to develop some low sugar cocktails recipe for this summer and specially a pink one for Valentine’s day. I am a huge fan of pina colada cocktails so I asked myself
‘How can I make a virgin pina colada recipe with less sugar and a hint of pink? ‘
Regular pina colada recipes are made of pineapple and honey which are both high in sugar – even if you do not use alcohol in your recipe, pina colada stay a high sugar cocktail.

So this is how I made my own virgin pina colada recipe, low sugar with a hint of pink colour. First, I substitute the pineapple by frozen raspberries which cut out half of the sugar from fruits. There is only 4.4 g of natural sugar in 100 g of raspberries compared to 10g for 100 g of pineapple. Then, I used xylitol a natural sugar free sweetener instead of honey. As xylitol is almost zero calorie (0.4 cal/100g) it was also a great natural switch to keep my weight on track while drinking cocktails. Finally I topped my drink with a bit of whipped coconut cream sweetened with xylitol again. Well, this part is optional of course and I recommend to cut this step if you watch kcal as coconut cream in not the lightest ingredient on earth. But, if you want to impress your guest with a low sugar healthy virgin pina colada recipe, go for it! Really, this drink blow up all my friends mind!
