Cut the Bok Choy roots, then cut the bulb in half lengthwise to release the leaves. Wash the leaves carefully under cold tap water to remove any dirt and impurities.
Pat dry leaves with absorbent paper or a clean kitchen towel. Set aside. Warm sesame oil over high heat in a large non-stick Wok pan.
Finely mince the garlic and grate the ginger. Stir in soy sauce, oyster sauce, and a pinch of sugar in a small bowl.
Add finely minced garlic and grated ginger to the frying pan and stir fry for 20 seconds, then add Bok choy leaves.
Stir and cook the bok choy for 2 minutes until the green part of the leaves turn bright green and starts to wilt.
Pour the soy sauce mixture and keep stirring and cooking for about a minute. Serve immediately with chili flakes and crushed peanuts.
