Chocolate Avocado Muffins – ½ cup Avocado – ¼ cup Sugar-free Maple Syrup – 2 teaspoons Vanilla Extract – ½ cup Unsweetened Cocoa Powder – ⅓ cup Almond Flour – ½ teaspoon Baking Soda – ½ cup Sugar-free Chocolate Chips
Combine the Avocado, Liquid Sweetener, Vanilla Extract, Unsweetened Cocoa Powder, Almond Flour, and Baking Soda into the bowl of a food processor.
Process the Chocolate Avocado Muffin batter until it's smooth, thick, and slightly shiny before transferring it into a large clean bowl.
Stir in the sugar-free chocolate chips and use a spatula to distribute them evenly into the chocolate avocado muffin batter.
Line a 12-hole mini-muffin pan with lightly oiled muffin cups and transfer a ball of chocolate avocado muffin batter into each using a spoon.
Bake the Chocolate Avocado Muffins for 12 to 15 minutes in an oven preheated to 350°F (180°C) until the top of the muffins start to crackle.
Let the chocolate avocado muffins cool down for 10 minutes in the pan and for another 10 minutes on a cooling rack.
