Cottage Cheese Cookies - Cottage Cheese – Crystal Sweetener Of Choice – Egg – Almond Extract – Vanilla Extract – Oat Flour – Baking Soda – Sugar-Free Chocolate Chips
In a food processor, add the cottage cheese, sweetener, egg, almond extract, and vanilla extract.

Blend on medium-high speed until the mixture is liquid and smooth. Fold in the oat flour and baking soda.

Process the cottage cheese cookie batter on low speed until it forms a moist cookie dough. Fold in chocolate chips, and pulse a few times to incorporate.

Use a cookie scoop to scoop out the dough. Roll between greased hands into a ball and place onto the prepared baking sheet, leaving a thumb of space between each cookie.

Press the top of each Cottage Cheese Cookies and bake them for 11 to 14 minutes at 350°F (180°C) or until golden brown on the edges.
