Keto Snowball Cookies – ½ cup Unsalted Butter – ⅓ cup Powdered Erythritol – 1 ⅔ cup Almond Flour – ¼ tsp Salt – 1 tsp Vanilla – ½ cup Finely Chopped Pecans FOR ROLLING THE COOKIES – ½ cup Powdered Erythritol
Combine the softened unsalted butter with the powdered erythritol in a mixing bowl. Beat on low speed for 2 minutes until light and fluffy.
Stir in the Almond Flour, Salt, Vanilla Extract, and Chopped Pecans into the buttery mixture and combine the Snowball Cookie Batter.
When the dough is thick and consistent, use a small cookie scoop to form 12 identical keto snowball cookie dough balls.
Roll the ball of Keto Snowball Cookie dough between your fingers. Form 12 snowball cookies.
Place all the Keto Snowball Cookies on a baking sheet lined with parchment paper, about 1 inch from each other.
Cook the Keto Snowball Cookies for 18-22 minutes in an oven preheated to 325°F (160°C). They should have slightly flattened.
Roll each Keto Snowball Cookie in a bowl filled with powdered sweetener while they are still lukewarm to make it stick.
