INGREDIENTS

Greek Yogurt Cookies - Egg – Crystal Sweetener Of Choice – Oat Flour – Greek Yogurt – Lime Juice – Vanilla Extract – Salt – Baking Powder GREEK YOGURT FROSTING – Lemon Juice – Greek Yogurt – Sugar-free Powdered Sweetener

In a large mixing bowl, whisk the egg, Greek yogurt, lime juice, vanilla extract, and sweetener until smooth.

Add oat flour, salt, and baking powder. Using a silicon spatula, stir to combine ingredients together.

Fold the lime zest into the Greek Yogurt Cookie batter and stir it to incorporate. Set aside for 10 minutes at room temperature.

Use a cookie dough scoop to scoop 1 1/2 tablespoons. Lightly press the top of each cookie to flatten them. Bake the cookies for 15-18 minutes at 350°F (180°C).

In a small mixing bowl, whisk the Greek yogurt, lime juice, and sugar-free powdered sugar. Add a teaspoon of frosting on top of each cookie with a pinch of lemon zest.
