Healthy CHEESECAKE CRUST – Almond Flour – Crystal Sweetener – Unsalted Butter – Vanilla Extract – Salt – Cinnamon HEALTHY CHEESECAKE FILLING – Low Fat Cream Cheese – Eggs – Lemon Juice – Crystal Sweetener – Vanilla Extract – Greek Yogurt – Cornstarch
In a mixing bowl, add the Healthy Cheesecake crust ingredients and stir to combine them evenly with a silicone spatula.

When the dough is consistent and forms a bowl, preheat oven to 350°F (180°C). Grease an 8-inch springform pan and cover the bottom and side with parchment paper.

Press the healthy cheesecake crust with your fingers at the bottom of a greased 8-inch springform pan.

Bake the Healthy Cheesecake crust for 10 minutes, remove it from the oven, and cool at room temperature while making the healthy cheesecake filling.

Place all the Healthy Cheesecake filling ingredients into a blender, and blend on medium speed until smooth.

Don't over-blend the Healthy Cheesecake filling. It shouldn't take more than a minute to get smooth.

Pour the filling over the cooled crust. Bake the cheesecake for 45-55 minutes or until its sides are golden brown, set, but the center is still a bit jiggly.
