Keto Buckeyes (Gluten-Free, No-Bake) – 1 cup Natural Peanut Butter – ⅔ cup Coconut Flour – ⅓ cup Erythritol CHOCOLATE COATING – 3.2 oz Sugar-free Chocolate Chips – 2 teaspoons Coconut Oil
Combine all the Buckeye ingredients in a bowl: Natural Peanut Butter, Coconut Flour, Crystal Sweetener.
Stir the Keto Buckeye Ball batter with a silicone spatula until the ingredients are well distributed.
When the dough is holding its shape, knead it with your hands to form a large, uniform no-bake peanut butter dough ball.
Divide the peanut butter dough into 18 small dough balls that you roll with the palm of your hands and place on parchment paper.
When 18 Keto Buckeye Balls have been formed, take the whole plate to the freezer for 12 minute to let them firm up.
While the keto buckeyes setting, combine coconut oil with sugar-free dark chocolate in a bowl and microwave until smooth.
Plant a toothpick into a buckeye ball and roll its bottom half into the dark chocolate before placing it back on the parchment paper.
Press the hole left by the toothpick with your finger to hide it and place the plate back into the freezer for 5 minutes to set the chocolate.
