Keto Butter Cookies – 2 ½ cups Almond Flour – ½ cup Softened Butter – ⅓ cup Powdered Sweetener – 2 large Eggs – 1 tsp Vanilla Extract – ¼ tsp Salt
Combine the unsalted butter and sugar-free powder sweetener in the bowl of a stand mixer and beat it with the paddle attachment until creamy and soft.
Add the Vanilla Extract, Egg, Salt, And Almond flour before beating on low-speed until the keto butter cookie batter is fully incorporated, soft, and buttery.
Transfer the butter cookie dough into a piping bag with the largest possible piping tip to allow for the thick dough to come out easily when forming cookies.
Pipe the cookies in a swirly motion on a baking sheet lined with parchment paper and cook them for 10 minutes at 350°F and 5 minutes at 325°F.
Let the Keto Butter Cookies cool down on a cooling rack for 30 minutes while preparing the chocolate dip (click below for instructions).
Dip half of the keto butter cookies in the prepared sugar-free melted chocolate then pop the cookies into the fridge for 15 minutes to set the chocolate.
