INGREDIENTS

– 10.5 oz Cauliflower Florets – 2 Eggs – ⅔ cup Almond Flour – 1 tbsp Psyllium Husk – ½ cup Cheddar – ½ cup Mozzarella SPICES – ½ tsp Onion Powder – ½ tsp Garlic Powder – ¼ tsp Oregano – ½ tsp Salt

Cook Cauliflower

In a large pan, add 1/3 cup water to boil. Add the cauliflower florets, cover, reduce to medium/low heat, and steam until soft and tender for about 8 minutes.

Squeezing Water Out

Place the steamed cauliflower florets on a towel and squeeze the towel as hard as you can to take the water out.

Process Cauliflower

Pour the dry, steamed cauliflower florets in the bowl of a food processor and blend for a few seconds.

Add Batter Ingredients

In a large mixing bowl, add the drained cauliflower, almond flour, psyllium husk, grated cheddar, grated mozzarella, beaten eggs, and spices.

Add Psyllium Husk

Psyllium husk is optional but adds a lovely texture while absorbing any extra water that could be left in the cauliflower.

Combine Tot Batter

Combine the Keto Cauliflower Tots batter with a spatula first, then squeeze the batter with your hands.

Scoop Cauliflower Batter

Scoop out the cauliflower batter with a cookie scoop to make sure you form 20 cauliflower tots of even sizes.

Forming Cauliflower Tots

Oil your hands with olive oil, roll the Keto Cauliflower Tots batter in your hands to shape little cylinders/tots.

Bake Keto Cauliflower Tots

Bake the Keto Cauliflower Tots for 15-20 minutes in an oven preheated to 400°F (200°C) or until golden on the outside and cheesy.

Serve the Keto Tots

Serve the Keto Cauliflower Tots hot with dips of your choice. I recommend my sugar-free ketchup recipe.
