KETO COCONUT FLOUR WAFFLES

INGREDIENTS

– 4 large Eggs – ¼ cup Melted Coconut Oil – 2 tbsp Heavy Cream – 2 tsp Vanilla Essence – ¼ cup Coconut Flour – 3 tbsp Erythritol  – 1 tsp Baking Powder

Mix Wet Ingredients

In a large mixing bowl, whisk eggs, heavy cream, melted coconut oil (make sure it's not burning hot, or it will cook the eggs!), and vanilla extract.

Add Dry Ingredients

Whisk in coconut flour, erythritol, and baking powder until the batter is smooth. Let the batter rest 10 minutes to thicken.

Oil the Waffle Iron

Preheat a mini waffle iron for at least 5 minutes. Slightly oil the surface of the irons with a pastry brush and coconut oil or avocado oil.

Bake the Waffles

Pour 2 tablespoons of batter per waffle - I use a mini waffle iron maker for this recipe. Bake each waffle for about 3-4 minutes.

Serve

Serve with sugar-free maple-flavored syrup and butter.
