INGREDIENTS

– 2 English Cucumbers – ½ tsp Salt – ½ cup Sour Cream – 3 tbsp Mayonnaise – 1 tsp Dijon Mustard – ¼ cup Dill – 1 tsp Erythritol – 2 tbsp Lemon Juice – 1 Garlic Clove – ¼ tsp Pepper

Peel Cucumers

Peel the cucumbers entirely or partially, depending on your taste.

Slice Cucumbers

Slice cucumber into skinny slices of 1/4 inches thickness. Sprinkle salt and toss to combine.

Sweat Cucumbers

Let the cucumber slices 'sweat' for 15-20 minutes to remove excess water.

Pat Dry Cucumbers

Drain liquids and pat dry slices with absorbent paper. Set aside in a salad bowl, in the fridge.

Prepare Dressing

 In another bowl, whisk in the dressing ingredients.

Pour Dressing

Pour dressing onto the cucumber slices and toss to combine evenly.

Refrigerate

Refrigerate the salad 1 hour before serving to blend the flavors.
