Keto Eggnog – 6 Eggs – ½ cup Erythritol – 1 ½ cup Heavy Cream – 1 ½ cup Almond Milk – ½ teaspoon Ground Nutmeg – ¼ teaspoon Vanilla Extract OPTIONAL – ½ cup Bourbon
Combine heavy cream, nutmeg, and unsweetened almond milk in a saucepan over medium heat.
Combine the Egg Yolks and Erythritol in a mixing bowl. Keep the Egg Whites aside.
Beat the egg yolk mixture with an electric beater until the low-carb eggnog mixture is fluffy.
Stop beating when the texture is smooth and pour half of the hot milk while stirring.
Transfer the egg mixture back to the saucepan with the rest of the milk. Heat and stir for 6-8 minutes.
Add the spirit of choice (or skip for an alcohol-free drink), and pour into a glass through a sieve.
