Keto Pudding – Egg Yolks – Eggs – Erythritol – Xanthan gum – Almond Milk – Heavy Cream – Butter – Natural Banana Extract – Vanilla Extract
In a large mixing bowl, whisk together the egg yolk, whole egg, erythritol, and xanthan gum. Whisk until the Keto Pudding mixture is fully combined before setting it aside.
In a medium saucepan, heat the almond milk and heavy cream over medium heat. Bring to a simmer for 3-4 minutes and stir often to prevent the liquid from overflowing.
Temper the mixture by removing the saucepan from heat. Scoop 1 tablespoon of the hot milk into the egg mixture and whisk vigorously to combine.
Now that the egg mixture is tempered with milk, pour the egg mixture from the bowl into the saucepan, stir the keto pudding and return to medium-low heat.
Cook the Keto Pudding for 5 to 7 minutes, gently stirring, until it thickens and coats the back of a spoon.
Once the Keto Pudding mixture has thickened, remove it from heat and stir in the fresh butter, vanilla extract, and banana extract.
Pour the Keto Pudding into a wide bowl to steam out and cool. Stir every 10 minutes to prevent skin from forming on top.
