– 1 large Egg  – 1 tsp Vanilla Extract – 2 tbsp Unsweetened Almond Milk – ½ tsp Baking Powder – 1 ½ tbsp Erythritol – 4 tbsp Almond Flour – 4 tbsp Fresh Diced Strawberries TO DECORATE – 1 Strawberry

Mix Ingredients

In a small bowl, beat egg, vanilla, unsweetened almond milk, baking powder, and erythritol. Stir in almond flour until smooth and add the Strawberries.

Transfer to Mugs

Transfer the batter into two tall mug cakes. Your mug cake will rise and double in height, so make sure you are using a tall mug, or the batter will overflow.

Bake

Bake each mug cake in the microwave, one at a time, power 800W for 90 seconds

Cool the Mug Cakes

Cool 2 minutes before serving to not burn yourself.
