CREPE BATTER – All-Purpose Flour – White Sugar – Salt – Eggs – Milk – Melted Butter – Rum optional ORANGE BUTTER CARAMEL – Sugar – Orange Juice – Unsalted Butter – Orange Zest TOPPING – Grand Marnier – Sugar
Make the Crepe batter by whisking the flour, sugar, and salt in a mixing bowl, and adding the beaten eggs, vanilla, and milk. Cook the crepes on a crepe pan for about 2 minutes on one side and one minute on the other.
Pour the sugar into a large non-stick frying pan and let it melt over medium heat until it reaches a light caramel color.
Remove the pan from the heat and pour the orange juice slowly. Fold in the orange zest and return the pan to medium heat until the sugar crystals that re-formed melt again.
Add the melted butter and let it boil before adding 3 or 4 folded crepes to the pan. Let them cook for up to 2 minutes to let them soak in the orange sauce before igniting them.
Serving: 1 Crepe Makes: 6 Crepes
