Coconut Flour Cookies
Coconut Flour Cookies – Coconut Flour – Powdered Sweetener – Eggs – Vanilla Extract – Butter
Beat the Softened Butter and powder sweetener for one minute on the high-speed setting of your stand mixer.
Add the vanilla extract and eggs to the butter mixture of your coconut flour cookie batter. Beat again on medium speed.
Stir in the coconut flour and beat the shortbread coconut flour cookie batter for a minute.
The coconut flour shortbread batter is ready when it's soft, buttery, and slightly wet. Set it aside for a couple of minutes.
Scoop the shortbread batter with a cookie scoop and roll it between your hands to form 8 small balls.
Place the coconut flour shortbread cookie dough balls on a cookie sheet lined with parchment paper.
Flatten the shortbread cookies with your hands and mark them with the back of a fork.
Cool the shortbread cookies down for 10 minutes on the baking sheet and on a cooling rack while melting some chocolate.
Optionally dip the coconut flour shortbread cookies into melted sugar-free chocolate.
