Shortbread Cookies with Coconut Flour – ½ cup Coconut Flour – ⅓ cup Powdered Sweetener – 2 large Eggs – 1 teaspoon Vanilla Extract – ⅓ cup Butter

Beat the Softened Butter and powder sweetener for one minute on the high-speed setting of your stand mixer.

Add the vanilla extract and eggs to the butter mixture of your shortbread cookie batter. Beat again on medium speed.

Stir in the coconut flour and beat the keto shortbread cookie batter for a minute.

The coconut flour shortbread batter is ready when it's soft, buttery, and slightly wet. Set it aside for a couple of minutes.

Scoop the shortbread batter with a cookie scoop and roll it between your hands to form 8 small balls.
