In a mixing bowl, whisk tahini, olive oil, and lemon juice together until well combined and a thick, smooth paste forms.
Whisk in the remaining ingredients: Greek yogurt, cumin, crushed garlic, salt, and pepper.
Taste and adjust, adding more salt and pepper if needed. If too thick, add some water to thin it out. If too bitter, add a teaspoon of honey.
