Combine the dry Chocolate Chip Macadamia Nut Cookies ingredients in a large mixing bowl: almond flour, xanthan gum, salt, and baking soda.
Combine the sweetener (erythritol or sugar) and the softened unsalted butter in the bowl of a stand mixer and beat it until the mixture is light and fluffy.
Pour the dry Chocolate Chip Macadamia Nut Cookie ingredients onto the beaten butter and stir the batter with a silicone spatula until it's consistent.
Stir in the dough the chopped macadamia nuts as well as the white chocolate chips (or dark chocolate chips) and recombine the batter until consistent.
