COCONUT PECAN CARAMEL

INGREDIENTS

CAKE BATTER – 4 large Eggs  – 1/2 cup Unsweetened Almond Milk – 1/4 cup Heavy Cream  – 1/2 cup Melted Coconut Oil – 2 teaspoons Vanilla Extract – 2 cups Almond Flour  – 1/4 cup Coconut Flour – 1/2 cup Unsweetened Cocoa Powder – 2 teaspoons Expresso Powder – 2/3 cup Erythritol – 3 teaspoons Baking Powder – 1/2 teaspoon Sea Salt COCONUT PECAN FILLING – 1 cup Heavy Cream  – 3 large Egg Yolks – 1/2 cup Brown Erythritol  – 1/2 cup Butter – 1/2 teaspoon Xanthan Gum – 1 teaspoon Vanilla Extract – 1 cup Unsweetened Shredded Coconut – 1/2 cup Chopped Pecan

Mix Wet Ingredients

In a large mixing bowl, beat eggs, almond milk, heavy cream, melted coconut oil, and vanilla extract. Set aside.

Combine Dry Ingredients

In another large mixing bowl, whisk together the dry ingredients: almond flour, coconut flour, espresso powder, unsweetened cocoa powder, erythritol, baking powder, and salt.

Whisk Dry Ingredients

Whisk until all the ingredients are evenly combined and no lumps show.

Make a Well

Make a well in the center of the dry ingredients and pour the liquid ingredients.

Stir Batter

Stir with a spatula to combine until the batter is smooth.

Split Batter

Evenly divide the batter into the two round pans - it's roughly 2 cups of batter per pan.

Cook Layers

Bake for 35-40 minutes in an oven preheated to 350°F (180°C), swapping pan places halfway through baking to ensure the cake layers bake evenly.

Prepare Pecan Filling

In a saucepan, whisk together heavy cream, egg yolks, and brown erythritol. Add butter to the saucepan and bring the saucepan over medium heat.

Add Gum

Once the mixture is on a light boil, sprinkle xanthan gum, stir in, reduce to low heat and keep cooking for 3-5 minutes until the mixture thickens.

Add Pecan and Coconut

Remove from heat and stir in vanilla, toasted chopped pecans, and unsweetened shredded coconut.

Assemble the Cake

Place the first cake layer onto a cake stand. Add half the coconut-pecan filling. Place the second cake layer on top and add the remaining coconut pecan frosting on top.
