How To Make Cloud Bread

Since it only takes 3 ingredients to make this cloud bread recipe, it’s easy to make even for baking beginners.

Ingredients

  • Eggs – I prefer to use free-range eggs as they give the best taste to baking recipes.
  • Cream Cheese – Cream cheese is a keto-friendly cheese. It makes this recipe fluffy and smooth.
  • Cream Of Tartar – Cream of Tartar is the secret ingredient that gives this 3-ingredient cloud bread its cloudy texture by keeping the beaten egg white airy for longer.

Making Cloud Bread

Start the cloud bread recipe by splitting the egg yolks from the egg whites and placing the egg whites in a glass bowl, or in the bowl of your stand mixer, if you have one.

Keep the egg yolks in another bowl at room temperature. They won’t stay there for very long, so it’s safe.

Beat the egg whites and the cream of tartar with an electric beater or with the beating attachment of your stand mixer until a fluffy stiff peak forms.

The cream of tartar helps maintain the stiffness and airiness of the beaten eggs.

In another large mixing bowl, beat the softened cream cheese and egg yolk with the same beater until it becomes creamy and no lumps of cream cheese are showing.

Gently fold the fluffed egg whites into the beaten egg yolk mixture. The mixture will deflate a little but keep mixing until you can’t see any more egg white.

Baking Cloud Bread

Preheat your oven to 300°F (150°C). Line a large baking sheet or two large sheets with some lightly oiled parchment paper.

Scoop 1/4 cup of cloud bread batter per bread with a cookie scoop or ice cream scoop.

Drop the cloud bread dough onto the parchment paper and spread it by applying a circular motion to form a thin 5-inch circle (12cm).

Make more cloud bread rolls with the remaining batter until no batter is left. Make sure to leave half a thumb of space between each bread so they don’t stick when they expand slightly.

Bake the cloud bread for 20 to 25 minutes at 300°F (150°C) until golden.

Let the cloud bread rolls cool down for a few minutes on the sheet then transfer them to a cooling rack for a few more minutes of cooling.

  • Preheat the oven to 300°F (150°C). Line a large baking sheet or two large baking sheets with oiled parchment paper. Set it aside.
  • Split the egg yolks from the egg whites and place the egg whites in a glass bowl, or in the bowl of your stand mixer. Keep the egg yolks in another bowl at room temperature.

  • Repeat with the remaining batter until no more batter is left – leave half thumb space between each bread.

  1. My son needs to be Dairy free, so is there an ingredient to substitute the cream cheese.
    With him being Gluten free, Dairy free, Soy free and yeast free, it has been a challenge to make stuff for him to eat. Especially for him to take for his lunches

    Thank you! I’ve been looking for this recipe. I lived on cloud bread while on Induction and long after that phase. I’ve put on a couple of pounds I want to take off, so this is perfect timing for me. I made them in the cloud form, but also came up with a sweet treat verson. Instead of making individual clouds, I smeared the whole mixture on a well oiled jelly roll pan and baked it the same. After cooling, I mixed 8 oz cream cheese with sweetener and whatever flavor extract I wanted-orange, strawberry, raspberry. Carefully take the cloud sheet off the pan and then smear the cream cheese mixture all over to all sides and then roll up and cut into pinwheels. It adds carbs, but I lost 80 pounds doing this so not too bad! And pumpkin season now – I am going to use pumpkin pie spice and sweetener to make pumpkin pie pinwheels!
