Check microwave power and adjust baking time – like ovens, microwaves do have power settings.
Don’t assume that all microwaves are set at the same powder. It’s not true. However, the truth is some microwave settings can’t be changed.

I am not sure what you called granulated stevia, if it is pure stevia it is the same as used in this recipe in the little packet. One packet is 1 gram so use 1 g of any stevia, powdered or granulated. Taste and adjust before baking regarding your taste. Would honey or maple syrup work for any of your mug cakes or other sweet treats. I have tried all sweeteners and they all including monk fruit with erythritol cause me to itch. I have a sweet tooth and love chocolate please help me.

Can flaxseed meal replace the almond flour?

I boo-boo’d on the recipe by adding 1 T of coconut flour instead of 1 t, and no matter, the recipe turned out fabulous.
I made a chocolate ganache frosting to top it…heavenly combination:
1 T almond milk
1/3 C sugar free Chocote wafers
1/2 t chocolate extract

If we cook it to have it for the next day, what is the best way to preserve it? Can it last outside in room temperatura or should I put it in the fridge?
I wouldn’t recommend to microwave a mug cake ahead. Microwave baking must be eaten within 30 minutes or the texture gets weird, chewy, dry out. If you cook this batter in the oven it will store well at room temperature as a regular muffin but don’t store baked goods in the fridge – the taste and texture change a lots. What is the reason for the almond meal or ground flax alternate? I’ve recently discovered that anything I make with almond flour or meal, I just cannot stand the taste. It’s so weird.. but coconut flour is doable, so how would this work by either leaving it out or increasing the coconut flour?
If you increase coconut flour it will be crumbly and won’t hold together.If you don’t like almond meal or flaxmeal you can use different nut or seed ground like hazelnut ground or even oat flour – not low carb tho. Low carb baking recipes often calls for a mix of almond meal and coconut flour to get the perfect texture. Coconut flour is very liquid absorbent and makes baked goods crumbly if not balanced with a different flour. You can also use tapioca flour, arrowroot flour but they are not low carb as well.
